Mediterranean Red Lentil and Pumpkin Soup
Couple of weeks ago I tried red lentils soup at a local Mediterranean restaurant. It was light and flavorful and perfect for lunch. Although it did resemble a bit like Indian red lentils dish and we call it ‘lal masoor dal’ and it is commonly served as a main dish with rice or Indian flatbreads for dinner. I tried to make a similar soup but decided to add fresh pumpkin as well. It added nice sweetness to otherwise meaty flavored red lentils. Here is a recipe that is both toddler and ‘adult’ friendly. Nothing beats a bowl of warm, flavorful soup on a cold winter night. But it is even better when it doubles up as healthy pasta sauce for your little one. I served it to my toddler with small sized, broken spaghetti type pasta with some butter and he enjoyed it to the last bite.

Pumpkin Spice Cake with Pecans (eggless)

Here is one more in the spirit of holiday season. Ever since I started making the ‘basic eggless cake’, I rarely use boxed cake mixes anymore. I find the eggless recipe more flavorful and less sugary. So far I have tried several variations with different juices and fruit purees and they have all turned out great. Today I tried with pumpkin puree and spices to make this pumkin pecan spice cake. By the way, my son loved the cake batter. He kept coming back for another bite until I put the mixing bowl in the kitchen sink.
