Cheese tortellini in creamy spinach sauce

I make this creamy spinach sauce when I am just not in a mood for regular heavy alfredo or even any store bought pasta sauce. I also put lot of spinach and it is in disguise so ‘not so spinach lovers’ may not even notice. Although, I think I can put even little bit more spinach than what I put last time I made it. My little one also likes this sauce with rice.

You need:

1/4 cup cream (whipping cream/fresh cream)
1 cup chopped spinach (I used frozen, thawed)
1 cup tomato sauce (you can use pureed tomatoes as well)
2 tbsp butter
2 tbsp all purpose flour (maida)
4 cloves garlic, chopped
1/2 tsp oregano
2-3 tsp garlic seasoning
2 cups milk
A pinch of nutmeg powder
1.5 cup cheese tortellini (or pasta of your choice)
1 cup water
Grated Parmesan cheese -few sprinkles

1. Boil pasta as per package instructions.
2. Heat butter in a sauce pan. Saute garlic for few seconds. Add flour and stir frequently for few seconds with a wire whisk. Add milk, chopped spinach, tomato sauce, seasonings, water and bring to boil. Add cream and nutmeg and simmer on low heat for 10-15 minutes.
3. This step is optional: Let the sauce cool a bit and use blender to make it smooth. I love spinach as it is as well.
4. Put the blended sauce back to the pan and adjust water if needed. Just simmer for couple of seconds.
5. Serve over pasta and sprinkle some grated parmesan cheese.
