With Mangoes in season, fresh mango salsa has become a ‘hot’ condiment. Mexican restaurants, fast food places, grocery stores, recipes in magazines – everywhere you would see one variation or the other. This is my first attempt to make this hot and sweet salsa and I think I will try few more recipes this season. I added some grapes to add some texture and made it hotter than usual.You need:

Here is one flaming hot recipe. I have been trying to imitate Chipotle Mexican Grill’s chicken for quite some time. Although this may not be the exact same thing, but it comes quite close – only slightly hotter. Since I like hot food and usually am never too embarrassed of putting Tobasco/Tapatío or any other hot sauce on almost everything, I quite liked the results. I am a big fan of Fitness magazine’s 400 calorie lunches. Basically their mantra is 300 calories breakfast,400 calories lunch, 500 calories dinner and 2 snacks 150 calorie each. A sensible diet on this calorie plan and moderate work out and you will lose pounds without losing on taste! Here is my attempt for a 400 calorie lunch where I wanted to have Taco Bell style burrito lunch but with less fat. Who does not like chips ‘n’ dip? I love making this Mexican dip for get-togethers. Very easy to put together and you don’t have to worry about leftovers because there won’t be any. Instead of making it the traditional way with vertical layers, I like to arrange my layers horizontally. This is something I cook almost every week. We love Mexican food and Spanish Rice is great in salad bowls, burritos, quesadillas, or as a side with beans, meats and soups. If nothing else, my son likes them with yogurt as well.
1.5 cups rice3 cups chicken broth/water2-3 cloves garlic, minced1 small onion, sliced1 small tomato, diced1/2 cup black/pinto beans2-3 tsp Taco seasoning (or blend of cumin powder,garlic powder,paprika)1 tbsp canola oil/butter1/4 cup salsa of your choicehandful of soy chunks (soaked in warm water for few minutes)

Black Bean Soup

1 cup canned black beans with liquid (or boiled black beans)1 cup chicken broth/water (or more according to desired consistency)1 tbsp butter1 tsp taco seasoning2 cloves crushed garlic/ 2 tsp garlic powder1/4 cup tomato sauce/crushed tomatoes
Melt butter in a sauce pan. Add crushed garlic and saute for few seconds(if using). Add tomato sauce and cook for few minutes. If using crushed tomatoes, let the tomatoes get tender.
