Here is an easy to put together lunch-ready in less than 5 minutes and can be prepared ahead and packed to go. It is a no brainer if you have some Pesto on hand. Today I really did not feel like just a sandwich for a quick lunch. It’s raining, and cold, and I wanted to warm up from the inside. Curry is always just the thing for me. This one is quick and easy.Ingredients:

I read a similar recipe years ago and found the combination of chickpeas or chana in a biryani dish very different. It is always great to have some meatballs on hand when you are in hurry and need to put together a quick and delicious meal. Couple of weeks ago I tried red lentils soup at a local Mediterranean restaurant. It was light and flavorful and perfect for lunch.
