Here is a super simple and delicious holiday treat that as the name suggests looks like a ‘Haystack’. I have seen recipes with lot of different ingredients but I liked the one with pretzels and peanuts the best. It could be because that these two are also my personal favorites when I need something to munch on. Peanuts are a good source of protein and Pretzels, a relatively low fat and low calorie snack, add subtle saltiness to the delicate white chocolate treat. Chocolate Coconut Fudge Bunny
I just made this fudge for easter tomorrow. I was out the entire day and did not get any time to prepare for tomorrow. So I just whipped a batch of this fudge with a handful of ingredients. I like chocolate with coconut (Almond Joy is one of my favorites) and since I had sweetened coconut flakes on hand, I decided to make the fudge with coconut. Candy Cane White Chocolate Fudge
Today I made this festive peppermint fudge for my friends and family. The original recipe called for Vanilla chocolate chips but I made it with white chocolate chips to get the oh-so yummy peppermint-chocolate taste. As I am writing, I already ate couple of pieces and I am struggling hard to not to grab another one!

Quick Mashed Potatoes

Last Thursday I came home late and there was hardly any time until dinner. I almost took out a box of mashed potatoes thinking I can quickly whip some. But the ‘mommy’ and me couldn’t quite settle for the ‘boxed dried potatoes’ for the little know. So I decided to made a quick version:

Pumpkin Spice Cake with Pecans (eggless)

Here is one more in the spirit of holiday season. Ever since I started making the ‘basic eggless cake’, I rarely use boxed cake mixes anymore. I find the eggless recipe more flavorful and less sugary. So far I have tried several variations with different juices and fruit purees and they have all turned out great. Today I tried with pumpkin puree and spices to make this pumkin pecan spice cake. By the way, my son loved the cake batter. He kept coming back for another bite until I put the mixing bowl in the kitchen sink.

Almond Butter Cookies (Eggless)

A very close family friend taught me how to make the basic eggless cookies and I am very fond of those. These cookies come out little crumbly and are not overly sweet. I had been thinking of replacing the unsalted butter (called in the original recipe) with the almond butter to add nutty flavor and goodness of almonds. I finally gave it a try last weekend.

Microwaveable Peanut Brittle

Just before I started writing, I stumbled upon a website with a page for ‘Countdown to Christmas’. It said 17 Days, 22 Hours and 28 minutes… But who is counting? Well, we are all counting! My 21 month old is already trying to sing ‘Jingle Bells..’ and he is more in tune than I am..! I am glad I found some time today to do some holiday cooking.
